Pistacia vera is a small tree that produces pistachio nuts. It is also the name of a prized Columbus pastry shop. Founded in 2004 by siblings Anne Fletcher and Spencer Budros, Pistacia Vera initially opened as a small booth in North Market. The duo renovated and moved into a brick-and-mortar location (formerly Reiners’ Bakery and ten Thurn’s) in Germain Village in 2007.
I learned about the bakery shortly thereafter. The bakery boasted cozy cafe seating and a friend and I, Theresa Todd, would meet there regularly for tea and treats. It was also a retreat when I worked in politics, specifically, while working on a gubernatorial re-election campaign in 2010.
During the COVID-19 pandemic, the bakery closed its Short North stall and temporarily, it’s café. When pandemic era restrictions lifted, the bakery reopened but has yet to offer indoor seating. Patrons don’t seem to care as there is ample seating outside the restaurant.
The French-inspired bakery boasts a host of hand-crafted, beautifully adorned treats. It is also a cherished local destination for Macarons.
What’s Special About This Place?
Pistacia Vera is one of the most elegant bakeries I’ve ever visited. The interior of the establishment showcases exposed red brick walls, which is typical of homes and businesses in the area. It’s hardwood floors pair nicely with the pastry shop’s black accents and brick walls. While the physical space is small, it is open and airy. Even if the baked goods were subpar – and they are most certainly not – the bakery would be worth visiting for its interior design alone.
I also love that the bakery sells greeting cards, small gifts and tote bags.
Its physical location is also a draw. Germain Village is a wonderful community of brick streets and homes. It has a vibe similar to other communities such as Old Town Alexandria in Virginia or Georgetown in Washington, D.C. When I begin to miss Old Town, I visit Germain Village.
My Favorite Treat
I’ve been frequenting Pistacia Vera for at least 16 years. It’s the place I go when I want to pamper myself. Although I’m not a fan of French pastries, I have always loved their sugar cookies. They are buttery, flavorful and appetizing. I’ve literally been going to this bakery solely for their sugar cookies for over a decade. If that isn’t the picture of loyalty, I’m not sure what is.
Over the past year, I have also availed myself to their expanded menu which includes egg salad on a delightful croissant.
