Attention, chocolate chip cookie dough lovers; this dessert is for you. (My grandmother dictated the opening of this post as she finished the “crookie” we were sharing.) The “crookie” is a chocolate croissant topped with chocolate chip cookie dough, from Butter & Whisk Bakery. The treat is decadent and perfect excuse for eating cookies for breakfast. My grandma is a local to the North Myrtle Beach area since 1988. She is a self proclaimed chocolate croissant aficionado, and avid proponent of dessert for breakfast. Grandma declared this to be the most delicious, creative combination she had experienced. Who’s going to tell her otherwise?
Butter & Whisk, located in the shops on Main St., has a slew of unique desserts that range from the “crookie” to cake jars to their signature “ooey gooey,” a blondie crust with a cheesecake filling served hot. Also known as the butter cake, it is so scrumptious that it now graces the menus of two of North Myrtle Beach’s most popular restaurants, Crave Italian Oven & Bar and Bar 1912.
Chef Lindsey Rollings worked on the ooey gooey recipe for two years before perfecting it to her satisfaction. Her commitment to quality is evident in every aspect of the bakery with each item perfectly crafted, cut, and packaged.
Squares of Perfection
The brownies and blondies are shaped and cut into perfect squares, lined evenly in rows; the beautifully layered cake jars show each layer of light fluffy cake, airy buttercream and a filling of the oreo cookie or sprinkles; and chocolate chip cookies are all exceptionally round with a little puff to them and appear the exact same size.
More than a Bakery
It is clear Lindsey’s business is so much more than a bakery. Butter & Whisk is a gathering place for hosting small and private events. The modern, airy space boasts a large counter in the center, designed to bring people together to cook, bake, eat and try something new.
Baking Camps for Children
During the summer of 2024, Chef Lindsey hosted a baking camp to expose children to baking and cooking. She also regularly hosts community cooking events, including a popular, ‘make your own pasta night.’ Patrons can also book her space for private events.
What’s Special About This Place?
The right interior wall is lined with a robust selection wine and pasta ingredients. The left side of the building, boasts a display case of the most perfectly shaped brownies, cookies and of course, crookies. In the center she features a display stand of crispies (the largest rice crisipie treats imaginable), bags of mini cookies, and cake jars and oreo cookie cake.
Background
Lindsey’s baking journey began in 2016 with Simply Cupcakes. The home-based business eventually grew into Butter & Whisk. With the expansion, Lindsey made cookies, cakes, cupcakes, crispies, and her famous cake jars. Butter & Whisk also makes custom cakes, cupcakes and decorative cookies with a truly elegant touch.
When the Main Street Shops opened in the middle of COVID, she became an original business in the complex. While the business was closed during the day for construction, she’ venture inside in the evenings.
Today, Butter & Whisk is a renowned local bakeshop and event space with Chef Lindsey at its center. Butter & Whisk also offers coffee from local coffee shop Be Known Coffee in Little River, SC, which roasts its own coffee in house.
